Manna for Muscles

The challenge started off a bit slow for me, I had gotten a bit lazy with food preparation and fell into a rut. I am also trying to get my kids on board and have encountered some resistance. They like a good, fresh baked baguette from the french bakery now and then, as anyone would. Both kids are open to trying it out,  under one condition, that I prepare EVERYTHING. I am a firm believer in planting the paleo seed when they are young so I will, for now, agree to this monumental task. I think it’s an important part of the foundation they will build on throughout life. It’s not easy though! They are bombarded with so much crap, and it’s crap that tastes good to them. Both my children are athletes, seemingly hungry all the time so I have a feeling I will be spending A LOT of time in the kitchen, stay tuned. Meantime, here are some of the yummy paleo meals I have prepared over the past few weeks.

mixed greens w/ tomato, peppers, avocado & olive oil lemon dressing

Sweet potatoes baked w/ a bit of coconut oil, topped with walnuts & cinnamon

veggie omelet with 1/2 avocado & tomatoes

Pork butt, slow cooked, pulled & reheated in it own fat (a little) with fennel seed, served with mixed greens & raw veggies

tomato, onion & herb omelet w/ hot sauce. Enjoy!

Rewind to Friday Day 12 thru Today 5/14

Friday 5/14 (Day 19)- Didn’t have time for breakfast this am, just grabbed a cup o’ coffee w/ a splash of cream

Lunch -2 eggs scrambled, leftover wilted braising greens & 4 oz wild salmon

Day 18 (Thurs. 5/13)

Breakfast- 2 eggs, black coffee

Lunch - leftover Thai-ish meat stuff over spaghetti squash

snack - 1/2 small paleo kit (shared w/ my son… he loved it!) and 1 oz beef jerky

Dinner- Herb Roasted turkey breast, mixed greens w/ walnuts & braising greens wilted in coconut oil

Day 17 (Wed. 5/12)

Breakfast - smoothie with mixed berries, coconut water & coconut milk

coffee w/ coconut milk (still experimenting with this one)

lunch - 2 cups blueberries

Dinner -(birthday party dinner)  Hamburger, salad, tiny bit of potato salad, baked eggplant, honeydew melon, mineral water

Day 16 (Tues. 5/11)

Breakfast - 3 eggs scrambled, coffee w/ splash of cream

Lunch - 1/2 Cantaloupe

Dinner - Thai-ish meat sauce (grass-fed beef, onion, garlic, red, orange & yellow peppers, coconut milk & spices, served over spaghetti squash & side salad w/ lemon ginger dressing

Day 15 (Mon 5/10)

Breakfast - 3 scrambled eggs & coffee (w/splash of cream)

Lunch- 1/2 cantaloupe w/ walnuts

Snack - 2 oz pkg beef jerky

Dinner - quick salad, nothing special… no time

Day 14 (Sunday, Mother’s Day)

Breakfast - spinach omelet, bacon & coffee (w/ splash cream)

Lunch - Banana

Appetizer - sushi (i know, i know… with RICE!)

Dinner - 2 glasses of Prosecco, Grilled Salmon & tuna, clams, grilled veggies, salad & a very tiny sliver of homemade (organic) cheesecake

Day 13 (Saturday 5/8)

Breakfast - Eggs, Bacon & coffee (black)

snack - grapes (prob around 2 cups)

Lunch - Pork chop broiled, braising greens w/ onions, mineral water

snack - beef jerky

Dinner - Pork chop, again, this time grilled though. (Unbeknownst to me was on the menu at my sister’s house) 2 glasses Prosecco 

Day 12 ( Friday 5/7) crazed, racing all over the place!

Breakfast - mixed berry smoothie, coffee w/ coconut milk

Lunch - more coffee

Dinner - boiled shrimp w/ lemon & swiss chard (slightly sauteed in olive oil)

Day 10 - 5/5/2010

Finally got it together (somewhat) and got some food. Stopped at Back to Earth (the health food store in my neck of the woods), hoping they would have shiitake salmon but to no avail! Disappointingly they did not have any good protein source that was not mixed with mayo or some other crap. I opted for a small gazpacho (about 2 cups), which I devoured immediately. Had an apple while driving home.

Need protein!! Made 2 eggs scrambled in coconut oil with 6 cherry tomatoes & sofrito (recipe to follow, it’s so damn good!) topped with guacamole & cilantro. And 3 strawberries.

I feel much better now :)

Day 10 - 5/5/2010

I am so tired can’t even think about what to have for breakfast. I’m cranky!! Had my usual BIG water,no lemon today though. And also had some coffee, with a splash of cream and a 14 oz bottle of Zico coconut water. NOT a good start for the day!!

Day 9 - May 4

Breakfast

16 oz Coffee w/ splash of cream (it’s amazing how adding just a capful changes the flavor so much)

(about half hour later)

Smoothie (8 oz. coconut water, 2 oz coconut milk, banana, frozen blueberries, strawberries, raspberries & pomegranate) 

1/4 of a cantaloupe

2 hard boiled eggs

Lunch

1/2 pear

handful walnuts 

2 oz. bag beef jerky

1 tsp. liquid fish oil

( I am hungrier after eating then I was before!)

Breakfast

4 smallish chicken & sage breakfast sausages

2 cups black coffee

1 tsp fish oil 

snack

about a cup and 1/2 of fruit

skipped lunch (I was out & didn’t have time)

1 tsp fish oil

handful of almonds

Dinner

Chicken breast, baked

chopped salad w/ 1/2 avocado, 1/3 of a large tomato, cilantro & parsley with cilantro lime dressing
